In the quiet atmosphere of Borgo Sentinella in Torre dell’Orso, every meal invites you to enjoy the taste of slow time and the flavours of Salento. Each choice is guided by sustainability and a deep connection to the land: cheeses from small local farms, bread baked by the village baker, fresh zero-kilometre ingredients from nearby shops, and vegetables picked from our own garden.

Breakfast

Every morning at Borgo Sentinella begins with a rich buffet of zero-kilometre products from Salento. Cheeses and cured meats from local farms, homemade jams, traditional breads and pastries. Coffee is prepared with the moka pot, just like it used to be. Eggs are cooked to order upon request. A breakfast that becomes an experience, inviting you to savour Apulia from the very first moment of the day.

The simple pleasure of a moka coffee, just like in the old days. At Borgo Sentinella, the poolside bar accompanies the rhythm of your day with refreshing breaks, cool drinks and easy moments of relaxation. Sometimes it is just the aroma of coffee that sets the slow, gentle pace of the masseria.
